Monasteries have been brewing as far back as the sixth century to provide sustenance and benevolence to the communities they served. Water-borne epidemics during this period were commonplace, and the boiling of beer during the brewing process, made it a far healthier option than the town’s water supply.

SO MONKS BREWED.

What made monastic breweries different was that the monks brought patience, process and dedication to the practice of brewing. At Monkless, there are no monks, but this is our devotion. We practice patience to perfection in our brewing process, and focus exclusively on Belgian-style ales.

Our classic Belgian-style ales are crafted to be accessible, refined and smooth. Consistency is critical and we never rush the process. We patiently enable the distinctive Belgian-style yeast to work their magic and don’t obscure their efforts with bold hop bitterness, or excessive adjunct spices, which detract from the old world character of the beer. We strive to be authentic to style, and focus on innovation in our interpretation and approach.

Like a monk’s ascetic practice, our palates tend to evolve through experience, and with beer it’s no different. Belgian-style beers are meant to be experienced, enjoyed, and appreciated.

The Brasserie at Monkless Belgian Ales will be a highly curated restaurant and taproom that fuses the delicious tastes of European Cuisine and intentionally pairs them with Belgian Beer. With Monkless’ award-winning Belgian-style ales, food presented by a Michelin star trained chef from San Francisco, and accompanied by some of the most impressive views the city of Bend has to offer, the new location is expected to please locals and visitors alike.
